If there is a product in Castilla – La Mancha that has given it gastronomic personality, that is, without a doubt, Manchego Cheese.
Of compact paste between ivory white and yellow with eyes of irregular shape and distribution, with the external impression of the “flower” on its flat faces and that of the “pleita” on the lateral surface.
The Manchego Cheese Denomination of Origin Regulatory Council guarantees consumers that the product they purchase meets the precise requirements to be considered as such, after having subjected it to successive quality controls in its production process.
On the other hand, it certifies that the pieces of Manchego Cheese are made with milk from Manchegan sheep that grazes in the natural region of La Mancha and guarantees its quality by means of a numbered and serialized back label, and a casein plate placed on the cheese with the following legend: SPAIN, Denomination of Origin MANCHEGO, Number and Series.
Manchego Cheese is a very complete food, which concentrates all the nutritional qualities of milk. It contains a high proportion of protein, which makes it even richer than meat in these elements. Vitamins as important as A, D and E are also present, fundamental in metabolic processes, such as growth, tissue preservation and calcium absorption. So it is recommended for all ages.
Under the Denomination of Origin Manchego Cheese. After being made with pasteurized milk from the most select herds of the La Mancha breed, it matures slowly in our chambers in the best humidity and temperature conditions.
It combines perfectly in tapas with crianza red wines.
